For the crust you will need:
One cup of almonds (soaked, rinsed, and drained)
¼ cup of shredded coconut
Five dates (pitted, chopped)
A pinch of pink salt
Step one: Process almonds in a food processor and gradually add coconut. Add chopped dates and salt and process until it combined.
Step two: Press almond coconut crusts into individual tart shells or six-inch springform pan.
For the filling you will need:
Zest of two limes
1/4 cup of lime juice
1/3 cup of maple syrup
1/8 teaspoon of vanilla
Step one: Blend together the avocado, syrup, and lime juice.
Step two: Stir in the lime zest by hand.
